Chinese Fried Chicken
This fried chicken takes around twenty minutes to make and is exceptionally more-ish. It's great to have with family for dinner and you'll be left wanting seconds. I mainly eyeballed the measurements for the sriracha, honey, soy sauce and sesame oil, so these measurements are just guidelines. Do more or less depending on how strong you want it. I served the chicken with rice, corn on the cob and fried peppers.

Ingredients:
A good squirt of sriracha sauce
About 2 tbsp soy sauce
About 1 tbsp sesame oil
About 1 tsp honey
4 chicken thighs
Method:
In a small dish, measure out the sriracha sauce, honey, soy sauce and sesame oil. If your amounts are different to the ones I put, make sure to always have more soy sauce than sesame oil. Mix until fully combined.
Prepare the chicken thighs if they still have the bones and skin on, and then dice them into 1-inch by 1-inch pieces using scissors. Try to make them all equal, though it doesn't have to be exact.
Heat a non-stick frying pan. Take a pastry brush (if you don't have one you could just use a spoon but a brush is preferable) and brush a bit of the sauce onto the centre of the pan. When it starts to sizzle, take a handful of your chicken pieces and put them in the sauce dish. Mix with your hands until each piece is coated with the sauce, and then place them one by one onto the pan. (You don't need any oil for the pan because of the sesame oil in the sauce.)
Make sure to have the chicken pieces flat on the frying pan, not piled on top of each other. Each piece must be touching the pan all at the same time, even if it means you have to cook them in batches.
While one side of the chicken is cooking, brush the side facing upwards with more sauce. After 2 - 3 minutes, using tongs, check the bottom of a piece of chicken. If it is golden brown and turning white under the sauce coating, flip the rest too.
After another 3 minutes, take a thick piece of chicken on the outside edge of the frying pan and cut it in half. If it is white in the middle and white juices run out when you press it, it is cooked. If it is not, return to the pan and check a new piece every minute until it is.
Take out the chicken pieces and place them in a bowl, and repeat steps 4 - 7 until all of the chicken is cooked.
Serve your chicken pieces with anything you want, and enjoy!

Read this with great interest, Maddy. Well done. Failure and success may be quite subjective, don't forget, and sometimes we are our own harshest critics. Learning to recognise our own limits takes a lifetime as well!
Do you think it might help to pray for guidance, when faced with choices or difficult decisions? I guess this depends on your views on God - does he/she exist? Can he/she be trusted? Is he/she remotely interested in me (you) and our life journey? What if I (you) don't agree with the guidance? How do I (you) recognise the guidance in the first place?
Above all, avoid becoming as disenchanted as Macbeth. I love the play, some wonderful speeches. Watched a very old Orson Welles production last night, and the "Tomorrow, and tomorrow, and tomorrow ..." speech is one of my favourite!
